With that, we turn to healthy eats and veggie delights. We love Coastal Living‘s advice in adding fresh-pressed juice to your favorite springtime cocktail. The Thai Cucumber Collins offers a refreshing flavor and leaves you feeling good! There is even a hint of lemongrass – a garden-fresh way to spice-up your cocktail list!
4 fresh mint leaves
3 sugar cubes
2 (¼-inch) cucumber slices
1 teaspoon grated (on a Microplane) lemongrass
6 tablespoons fresh-pressed cucumber juice
1/4 cup (2 oz.) white rum
2 tablespoons fresh lime juice
6 tablespoons club soda
Cucumber slices and mint leaves, for garnish
Muddle mint leaves, sugar cubes, cucumber slices, and grated lemongrass in a cocktail shaker. Add fresh-pressed cucumber juice, white rum, and fresh lime juice. Swirl to combine. Add ice, cover with lid, and shake vigorously until thoroughly chilled. Strain into an ice-filled Collins glass. Top with club soda. Garnish with cucumber slices and mint leaves, if desired
